Mixed Seafood Pastel

Ingredients:

Crust:

3 cups all-purpose flour
dash of salt
5-6 cups of water
eggwash

Filling:

3 tbsp butter
1 clove garlic, chopped
2 onions, chopped
1 small can tomato paste
2 pcs green bell pepper, finely chopped
2 pcs red bell pepper, finely chopped
1/4 kilo fish fillet, cubed
1/4 kilo shrimps, peeled
1/4 kilo squid, sliced
2 tbsp white wine
1/4 cup grated queso de bola
2 tsp liquid seasoning
2 carrots, cooked and diced
10 green olives
1 cup cooked garbanzos
oregano and bay leaf
1 cup breadcrumbs
1 cup fish or chicken broth

Cooking Procedure:

Prepare Crust:

1. In a bowl, combine the flour and salt.
2. Cut in the shortening until mixture is mealy.
3. Add enough water to form a ball of dough.
4. Wrap the dough in plastic until ready to use.

Prepare Filling:

5. In a skillet, heat the butter then saute the garlic, onions, tomato paste, and bell peppers. Add the seafood. Simmer until the sauce is slightly thick.
6. Pour the cooked mixture into an ovenproof glass dish.
7. Cool for a few minutes. Roll out the dough to a size that will cover the glass dish.
8. Place the rolled dough over the dish to cover.
9. Pinch the edges of the pan to seal.
10. Flute the edges decoratively with the fingers or press with the tines of a fork.
11. Prick the crust with a fork or cut out the designs on the top.
12. Brush with egg wash the bake in the oven preheated at 375F for 15 minutes or until the crust is golden brown.
