Ingredients:
¾ k ground lean pork
¼ k pork fat
4 tbsp. sugar
2 tbsp. coarse salt
2 tsp. ground black pepper
2 tbsp. vinegar
¼ tsp. salitre
½ tbsp. soy sauce
2 tsp. garlic (chopped)
1 tbsp. rum
atsuete or food coloring Pork casings
Cooking Procedure:
1. Mix all ingredients and refrigerate for 5 days.
2. Stuff mixture in pork casings. Tie with strings to desired length.
3. Hang to dry.
